Potato bombs are a simple and tasty appetizer , ideal to start a lunch or dinner in the company of friends or to serve as a homemade aperitif along with other appetizing finger foods. They are small, oven-cooked, golden and fragrant bites made with a croquette-like dough and containing a tasty and chewy filling of cooked ham and mozzarella .
To make them, simply pass the boiled potatoes through a potato masher and mix them in a bowl with the flour, egg, grated Parmesan, a pinch of yeast and nutmeg and freshly ground pepper.
The resulting mixture is then spread out in a not too thin layer, cut out with a 10 cm diameter cutter and then filled with the indicated ingredients.
The result is creamy, melt-in-the-mouth balls, ideal to prepare even at the last moment, which will win over both adults and children with their goodness and ease of execution. For an even more pleasant result, you can also prepare them in the fried version, cooking them in boiling seed oil, or you can play with the filling and fill them as you like according to personal taste: with smoked provola , taleggio, scamorza, asiago or another cheese of your choice instead of mozzarella and raw ham, grilled vegetables, mortadella, salmon, bacon or bacon cubes instead of cooked meat.
For perfect results, we recommend that you drain the mozzarella well from the whey and prefer yellow-fleshed potatoes: less floury and starchy than white ones, they do not fall apart when cooked and remain more compact.
