Stuffed zucchini: The recipe with meat and 5 delicious variations for filling (also without meat)

Stuffed zucchini are a rich and appetizing second course, ideal for a tasty and appetizing summer meal with friends or for Sunday lunch with the family.
To prepare them, it is enough to remove the pulp from the zucchini to transform them into edible containers suitable for the most varied fillings. In the version proposed here, we have opted for a filling made of minced meat mixed in a bowl with egg, grated Parmesan, zucchini pulp, crumbled sausage, salt, pepper and chopped parsley.
To bring them to the table, simply cut the zucchini in half lengthwise without trimming them, empty them from the inside with the help of a spoon or a corer and then fill them with the minced meat mixture: the zucchini must be completely deflated, this way they will cook directly in the oven without the need to blanch them beforehand.
Now all you have to do is place the stuffed zucchini on a baking tray and cook in the oven for about 45 minutes. In the last 5 minutes we continue cooking with the grill to obtain a golden gratinated crust on the surface and a pleasantly moist and soft heart.
If you want a stringy result, you can add a few cubes of provola, mozzarella or cheese. Stuffed zucchini is great both hot and at room temperature and can easily be baked ahead of time and served as needed.
You can vary the filling as you like and prepare stuffed zucchini without meat, stuffed with tuna, cherry tomatoes, onions or simply with ricotta and salami. If you want a vegetarian version, you can also use just zucchini pulp, breadcrumbs and olives, or customize the dish to your taste with the ingredients at home: for a practical and inexpensive recipe that will require you to empty the fridge.
