We chose Royal Gala apples , a very aromatic and pleasant variety, but you can also choose Golden Delicious or Renette, which are also sugary.
For a gluten-free dessert, you can replace the 00 flour with rice flour and the granulated sugar with honey or erythritol. Instead of apples, you can also use pears and enrich the dough with dried raisins or chocolate chips. You can also flavor the dessert with a pinch of vanilla or cardamom powder.
