1. Heat olive oil in a large skillet over medium-high heat.
2. Add diced smoked sausage to the skillet and cook until browned, about 5 minutes.

3. Add diced potatoes, diced bell peppers, and diced onion to the skillet. Cook, stirring occasionally, until the vegetables are tender and the potatoes are cooked through, about 10-15 minutes.
4. Add minced garlic, paprika, salt, and pepper to the skillet. Stir to combine and cook for an additional 1-2 minutes.

1 1/2 lb (650g) small baby potatoes, quartered

1/2 teaspoon red chili pepper flakes, or to taste
1/2 teaspoon minced garlic

1/4 cup (60ml) low-sodium chicken stock (or beef, vegetable…)
1 teaspoon hot sauce of your choice (we used Sriracha)
Salt and fresh cracked pepper
Chopped parsley, for garnish
Grated Parmesan, optional
