15 MINUTE CHOCOLATE CAKE…It’s also perfect for beginners…

METHOD OF PREPARATION:
Heat the oven to 180°C. Line a 40×29 cm baking sheet with baking paper.
In a large bowl, whisk the egg whites with a pinch of salt until soft peaks form.
Gradually add the sugar to the egg whites, continuing to beat until the sugar is completely dissolved and the mixture forms stiff peaks.
Gently mix in the egg yolks until the mixture is smooth and homogeneous.
Sift the flour and cocoa powder and gently mix into the egg mixture in two batches, making sure that the mixture does not deflate.
Spread the mixture evenly in the prepared pan.
Bake for 15 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely before frosting.
Make the frosting:
In a mixing bowl, combine sour cream, powdered sugar and mascarpone cheese. Mix for 2-3 minutes until the mixture becomes smooth.
In a small bowl, melt the dark chocolate and mix with the hot cream until smooth.
Add the melted chocolate and cocoa powder mixture to the cream mixture and mix until completely combined and smooth.
Assemble the cake:
When the cake has cooled, spread the frosting evenly over the top.
If you wish, you can decorate the cake with chocolate shavings, fruit or any other accessories of your choice.
