WAFER WITH BISCUIT: You must not have tried this

Ingredients

– two wafers
For a biscuit
– 9 egg whites
– 37 dag sugar (crystal)
– 18 dag margarine
– 15 dag chopped walnuts
– 15 dag raisins
– 22 dag flour
– juice of 1 lemon

Cream

– 9 egg yolks
– 27 dag of powdered sugar
– 20 dag of margarine
– grated zest from one lemon

Preparation

Prepare all the ingredients for this cake. Beat the egg whites until stiff, gradually adding sugar and lemon juice. Then gently mix in walnuts, raisins and flour.
Cover a baking sheet (the size of a wafer) with baking paper and transfer the prepared biscuit dough onto it. Spread the dough evenly on the baking sheet and put it in a heated oven at a temperature of 180°C and bake for 20 minutes.
In the meantime, mix the egg yolks and sugar until foamy and steam until the required firmness is reached, then add the margarine cut into strips and mix well into a fine cream.
