Ingredients
Spinach and ricotta sauce
750 g frozen leaf spinach (thawed) or 600 g fresh spinach
1 onion
1 clove of garlic
1 tbsp oil
500g ricotta
2 eggs
2 tbsp grated Parmesan
½ tsp grated nutmeg
Salt pepper
Tomato sauce
750 g pureed tomatoes
1 tbsp Italian herbs
Salt pepper
1 tsp sugar

1 pack of lasagne sheets
150g grated Parmesan
Instructions
Preheat the oven to 200°C (O/U heat) and grease the baking dish. Squeeze out frozen spinach well. Finely chop the onion and garlic and fry in hot oil. Add the spinach and let it wilt until all the water has evaporated.
