These vanilla passion fruit slices taste like Solero ice cream – only as a cake and just so fresh and delicious. Pure summer!
INGREDIENTS
IMPORTANT: DOUBLE THE INGREDIENTS FOR A WHOLE OVEN TRAY!
FLOOR
3 eggs size M
150g sugar
120 g soft butter
1 tsp vanilla paste
1 tablespoon milk
½ lemon
200g flour
1 tbsp baking powder
CREAM
300 g cream cheese
70g sugar
3 tsp vanilla paste
500 ml whipped cream
FRUIT MIRROR
475 g canned mango
5 passion fruits
1 mango
6 sheets of gelatin
THAT’S HOW IT’S DONE
Preheat oven to 180°C top/bottom heat.
For the batter, beat the sugar with the eggs until fluffy. Stir in soft butter, vanilla extract, milk and lemon zest and then add flour,
baking powder and a pinch of salt. Process everything into a homogeneous dough. Line a medium-sized, rectangular baking tin with baking paper and pour the batter into the tin. Bake in the oven for about 20 – 25 minutes until golden brown. Then let it cool down well.
