Ultra Light Orange Mousse

Preheat the oven to 160°C (thermostat 5-6).
Separate the egg whites from the yolks , keeping three yolks and one whole egg. Beat the egg whites until stiff and set aside.

In a large bowl, beat the sugar with the three egg yolks and the whole egg until light and fluffy.
Gradually add the oil , continuing to beat to maintain the foamy texture.
In another bowl, sift the flour and baking powder together , then gently fold into the egg mixture.
Add the orange juice and mix well.

Gently fold in the beaten egg whites using a spatula, lifting the dough so as not to break the whites.
Pour the mixture into a round mold with a hole in the middle, previously buttered and floured.
Bake for about 50 minutes or until the cake is golden brown and a toothpick inserted in the center comes out clean.

Let the cake cool in the mold for a few minutes, then turn it out onto a rack until completely cooled.
Advice:
Serve this light orange cake as a snack or dessert, ideally accompanied by a scoop of vanilla ice cream or a cloud of whipped cream.
