Torta Caprese – the recipe for the classic Campanian dessert

The Caprese cake , as its name suggests, is a typical dessert of the island of Capri made from dark chocolate and almonds. It is one of the cornerstones of Neapolitan pastry and is known and loved throughout the peninsula for its irresistible deliciousness. What makes it unique and immediately recognizable is the intense almond flavor, combined with a moist and meltable inner consistency.
The Caprese cake has very ancient origins and was invented around 1920 by the Caprese pastry chef Carmine Di Fiore , who forgot to add flour to the dough when preparing it.
From a providential error, an authentic delicacy was born: crispy on the outside and soft in the heart, it conquered practically everyone. Today, as yesterday, this delight is perfect to end a meal, on the occasion of a special invitation, a festive dinner or as a snack accompanied by a cup of hot tea.
For this recipe you can use either ready-made almond flour or whole almonds for mixing, but remember to grind them in pulses and with several breaks to avoid overheating the blender blades. To obtain a perfect result, do not extend the cooking time of the dessert too much: there is a risk that the inside will dry out. After baking, let it rest and cool before turning it out of the mold so as not to spoil its structure.
Traditionally, Caprese is prepared in a low aluminum mold with flared edges, like the one used for Pastiera, but if you don’t have one, you can still use a classic springform pan. You can replace the dark chocolate with white chocolate and the orange peel with lemon peel to get an even fresher and more fragrant variant, perfect for the summer season.
