The recipe for Express Cookies without Butter

Ingredients:

  • 90g of sugar
  • 80 ml of vegetable oil
  • 1 egg + 1 egg yolk
  • About 250g of flour
  • 1 teaspoon baking powder (5-6g)
  • Lemon (or orange) zest to taste
  • 1g of vanillin or 1 teaspoon of vanilla sugar
  • A pinch of salt

Instructions:

  1. Preheat the oven to 180°C.
  2. In a bowl, mix the egg, egg yolk, sugar, vanilla and salt.
  3. Add vegetable oil and mix well.
  4. Stir in the lemon zest, then add 2 tablespoons of flour and the baking powder. Mix until you obtain a homogeneous mixture.
  5. Add the rest of the flour gradually kneading until the dough is soft.
  6. Roll out the dough and divide into 4 equal parts. Make stripes with each part.

Assemble the strips to form a roll, then cut it into small cubes.
Place the dough cubes on a baking tray lined with baking paper.

Bake the biscuits for about 15 minutes, until they are golden.
Let the biscuits cool on a rack before enjoying them.
