Tasty pancakes for lunch or dinner – Pancakes filled with mashed potatoes, peppers, green onions and cheese – A treat you can’t get enough of

preparation:

Clean and boil the potatoes in salted water, then mash them like a mash.

Sauté (in a little oil) the finely chopped onion until translucent. Add the finely chopped pepper and saute everything together for a few minutes.

Transfer the vegetables from the pan to the bowl with the mashed potatoes. Add 100 g of grated cheese, finely chopped green onion, salt, pepper and mix very well.

For the pancake batter, crack the eggs into a bowl. Add a pinch of salt, sugar and beat well.
Add half the milk, half the flour, then the remaining milk, the remaining flour. Finally, add the oil. Bake the pancakes as you usually do.

Fill the pancakes with the prepared filling.
Crack 3 eggs into a bowl. Add salt and beat well, then add 3 tablespoons of flour. Pass each filled pancake through the dough and through the breadcrumbs.

Fry them in a pan with a little butter until they are nicely browned on both sides.
