Sweet cherry focaccia is a soft and delicious leavened product , perfect for breakfast and summer snacks. A variant of the classic savory recipe, it does not require the addition of milk and butter and is prepared in a few minutes: simply combine the ingredients in a bowl, mix with a wooden spoon and let it rest until you get a homogeneous mass.
The dough is obtained which, once it has risen, is placed in a pan, sprinkled with cherry pieces, sugar and a little oil and put in the oven. In this way, during cooking the fruit will release its juice and slowly caramelize: the result is a soft, fragrant focaccia, with a delicious crunchy crust on the surface, which can be excellently enjoyed both hot and at room temperature.
If you want, you can cut the focaccia in half and serve it with peach jam or homemade apple compote, a cleansing and diuretic herbal tea to be sipped with a teaspoon of honey.
