Super fruity summer cake for many occasions: Strawberry mousse cake

Preparation:

1. Preheat the oven to 180°C.

Then, in a bowl, whisk the sugar and eggs until the mixture turns white and doubles in volume.
2. Add the sifted flour and a pinch of salt and mix gently.
Next, pour the batter into a buttered and floured cake pan.
3. Bake for 20 to 25 minutes.
In the meantime, prepare the strawberry mousse.
Mix the strawberries with sugar and water and then heat the resulting puree in a saucepan.
4. Add the gelatin powder and mix well.
Allow the preparation to cool down.
Whip the crème fraîche until creamy.
Carefully fold the cooled strawberry puree into the whipped cream.
5. Prepare the strawberry jelly by mixing the strawberries with sugar and water and then adding the gelatin powder.
6. Cut the cooled sponge cake in half.
Spread a layer of strawberry mousse on the first half of the sponge cake.
Add a layer of strawberries cut into small cubes.
7. Cover with the second sponge cake half.
Spread the strawberry jelly on the cake.
8. Now, place the cake in the fridge for at least 2 hours.
9. To serve, decorate the cake with whole strawberries.
