Ingredients
For the Crust
1 1/3 Cups Flour
1 Tablespoon Sugar
3/4 Teaspoon Salt
3/4 Cup Unsalted Butter, chilled
4 Tablespoons Ice Water
For the Filling
3 Tablespoons Butter
4 Pears, firm but ripe (see note)
1/4 Cup Sugar
1 Tablespoon Flour
1/2 teaspoon Cinnamon
1 1/2 Tablespoons Candied Ginger, minced
For the Egg Wash
1 Egg, large
2 Tablespoons Water
3 Tablespoons Sugar
