Directions:
Preheat oven to 325ºF. Line two baking sheets with parchment paper and set aside.
In a medium bowl, combine flour, spices, nuts, sugar and orange zest. Using a pastry blender, or a stand mixer with paddle attached on low speed, cut in butter until mixture resembles fine crumbs and starts to cling together. Dough will still be very crumbly. Knead the dough until smooth. Form into a ball and then flatten slightly into a compact disk. This will be frustrating because the dough will be so crumbly.
On a lightly floured work surface, roll dough until ½-inch thick. Using cookie cutters, cut into desired shapes. Place on prepared baking sheets 2 inches apart.
Use a small paintbrush to spread a light layer of jam over each cookie, leaving some space around the edges. This part is time consuming. Be patient and don’t use too much jam.
Bake for 18-22 minutes (depending on the size of your cookies) until lightly browned around the edges and the centers are set.
Remove from oven and immediately lightly sprinkle with granulated sugar, and then sparkling white sugar. Cool and enjoy.
