Strawberry cake with mascarpone cream

Ingredients

For the ground:

250 g soft butter
200 – 250 g sugar

1 packet of vanilla sugar

a pinch of salt

6 eggs

350g flour

1 packet of baking powder

30 g cocoa powder

For the mascarpone cream:

500g mascarpone

250 g low-fat quark

3 tbsp lemon juice (freshly squeezed)

100g sugar

2 packets of vanilla sugar

For covering:

1 kg strawberries, washed, cleaned and halved

2 packs of red strawberry flavored cake frosting

500 ml boiling water

preparation

Preheat the oven to 175 C and line a baking tray with baking paper.

Mix butter, 200 g sugar, 1 vanilla sugar and salt well with a hand mixer. Beat in the eggs one at a time, stirring well after each addition.

Mix the flour, baking powder and cocoa powder and sift it onto the dough.
Using the spatula, fold in the flour mixture.
