Speculoos slices

Modes: Select thickening and start at 80 degrees.
or 7 min/90 degrees/level 3

Place apple pieces in the mixing bowl and fold in with the spatula. Cook for 5 minutes/90 degrees/level 1/counterclockwise.
Let the apple compote cool slightly and then spread it over the sponge cake. Chill for approx. 1-2 hours.
Place the mixing attachment in the mixing bowl and add the ice-cold cream.
Beat without time setting/level 3.5 until stiff. After about 20 seconds, add the cream stiffener.
Spread the cream over the cooled apple compote and spread the speculoos biscuits on top.
Let the cake sit for about 3 hours, preferably overnight.
