Soft and Glazed Orange Cake

Preparation of dry ingredients : In a bowl, sift together the flour, baking powder, salt and vanilla sugar. Set aside.
Preparation of the sweet base : In another bowl, mix the sugar and the orange zest. Let sit for 10 minutes so that the sugar soaks up the essential oils from the zest.

Preparation of the dough : Squeeze the oranges to extract the juice. Then add the eggs, vegetable oil, orange juice and crème fraîche to the sugar-zest mixture. Whisk well until smooth.

Incorporating the dry ingredients : Gradually incorporate the flour mixture into the wet mixture, mixing gently until the dough is smooth and lump-free.

Cooking : Pour the batter into a 20 x 10 cm (8” x 4”) cake tin that has been buttered and floured. Bake in a preheated oven at 180°C for about 1 hour and 10 minutes, or until a toothpick inserted in the centre comes out clean.

Cooling : Allow the cake to cool slightly before removing from the mold and leaving to cool completely on a wire rack.

To make the glaze : While the cake is cooling, make the glaze by mixing the icing sugar with the orange zest and juice until smooth. Pour the glaze over the cooled cake and let it set before serving.
