The salmon balls are a simple cold appetizer and delicious, easy and quick to prepare. These are savory truffles without cooking , perfect for special occasions, party menus, as finger food for a standing buffet or an aperitif with more expensive friends, along with a good glass of frozen Prosecco.
To bring them to the table, simply gather the smoked salmon, the spreadable cheese, the parsley, the grated Parmesan and a pinch of salt and ground pepper and mix everything until you get a smooth mixture; all you have to do is form many balls, let them rest in the fridge for half an hour, then cover them with chopped pistachios and place them on a tray or, for a more spectacular result, in colored paper cups.
The result is appetizers that are crispy on the outside and tender to the bite, which will win over the palates of young and old alike; practical, even to prepare in advance , they will literally sell out like hotcakes.
