Raffaello cake with the simplest and best cream

Simple to prepare and yet incredibly tasty. A cake that you will definitely love too.
The dough is prepared in just a few minutes and the cream is even quicker.
To make the cream, all you have to do is mix mascarpone with sugar and whipped cream until smooth and it’s ready.


For the dough (3x):

3 egg whites

5 tbsp sugar

100 g desiccated coconut

1 tbsp breadcrumbs

For the cream:

500 g mascarpone

360 ml whipped cream

5 tbsp powdered sugar

Aside from that :

Grated coconut for sprinkling

Raffaello balls to decorate


Beat egg whites with sugar until stiff. Add coconut flakes and breadcrumbs and mix.

Pour the prepared dough into a cake tin (24 cm) lined with baking paper.

Bake in a preheated oven at 180 °C for about 12 minutes.

After baking, let it cool down and repeat the whole thing 2 more times.

Sweeten mascarpone with sugar and add whipped cream.
