Ingredients

  2. ・60g(2 oz) egg white, chilled
  3. ・20g(0.7 oz / 5 tsp.) granulated sugar
  4. ・50g(1.76 oz / about 1/2 cup) almond flour
  5. ・30g(1 oz / 3.5 Tbsp.) powdered sugar
  6. ・9g(1 Tbsp.)cake flour
  7. ・powdered sugar (for sprinkling) adjust to suit your needs
  8. Pumpkin Glace
  9. ・90g (3.2 oz) pumpkin, net weight
  10. ・1 Tbsp. granulated sugar
  11. ・1 Tbsp water
  12. dash ・cinnamon powder :
  13. ・1 tsp. rum
  14. Cream
  15. ・200g(7 oz, 9/10 cup) heavy cream
  16. ・1 Tbsp. granulated sugar
  17. Pumpkin Mont Blanc Cream
  18. ・300g (10.6 oz) pumpkin, net weight
  19. ・1 tsp. rum
  20. ・45g(1.6 oz, 1/4 cup) granulated sugar
  21. ・5 drops of vanilla essence
  22. ・25g(0.9 oz / 2 Tbsp.) unsalted butter
  23. ・1 tsp. rum
  24. ・65g(2.3 oz, 2/7 cup) heavy cream
