Puff Pastry Cones

Prepare the Pastry Cream:
In a medium bowl, whisk egg yolks, vanilla, and sugar until pale and fluffy.
Add half of the hot milk and mix well. Then add the flour, mix until smooth, then add the rest of the milk.
Transfer the mixture to a saucepan and place over low heat. Whisk constantly until the mixture thickens (about 5-7 minutes).
Pour the pastry cream into a glass bowl, cover with plastic wrap and let sit in the refrigerator.

Preparation of the Cornets:
Preheat the oven to 200°C.
Roll out the puff pastry and cut it into 12 equal strips.
Wrap each strip around a horn-shaped mold, overlapping the layers slightly.
Brush with cream or beaten egg and bake for 15-20 minutes, or until golden and crispy.
Let the cones cool, then carefully remove them from the mold.

Assembly:
Once the pastry cream has cooled completely, gently fold in the whipped cream.
Using a piping bag, fill each cone with the cream.
Dust with powdered sugar before serving.
