Passion fruit cheese cream cake recipe

without bringing it to the boil and completely dissolve the squeezed gelatine in it. Mix the curd with sugar and vanilla sugar, add the remaining passion fruit juice and stir everything well. Add a few tablespoons of the quark mixture to the gelatine, mix thoroughly and then add the gelatine mixture to the remaining quark mixture, stirring constantly. Chill the cream until it begins to gel.

Whip the cream until stiff and fold it into the slightly gelled passion fruit and curd mixture. Cut the completely cooled sponge cake in half horizontally. Place the bottom half, cut side up, on a cake plate and surround it with a cake ring or the edge of the springform pan. Spread the cream evenly over the bottom sponge, place the top half on top and press gently.

For the icing, prepare the cake icing according to the instructions, but replace some of the liquid with 375 ml passion fruit juice and add 125 ml water. Pour the finished icing over the top sponge base of the cake.
Let the cake set in the fridge for several hours, ideally overnight. Before serving, carefully loosen and remove the edge of the mold with a knife.
