Panettone cake

Ingredients:

– 450 g of flour
– 225 g of butter melted at room temperature
– 120 g of sugar
– 100 g of candied lemon and orange peel
– 1 teaspoon of vanilla extract
– 2 eggs
– 5 egg yolks

– grated lemon and orange peel
– 30 g of fresh yeast
– 30 ml warm milk
– 70 g of dried raisins
– 70 g of dried currants
– 1 teaspoon of salt
– 1/4 teaspoon of nutmeg

Preparation:

Mix fresh yeast with warm milk, add a teaspoon of sugar and a teaspoon of flour. Sift flour into a deep bowl, add nutmeg and grated zest from one lemon and one orange. Put the eggs, egg yolks, vanilla extract and softened (almost melted) butter in another deep bowl.

Place the risen yeast in the flour, slowly add the other liquid ingredients. Mix everything together well until a nice elastic dough is formed that does not stick to the bowl and hands. Put transparent foil over the bowl and leave the dough to rise.
