Orange muffins: the quick and easy recipe to make them very soft

Step 1
Start preparing the orange muffins by beating the eggs with the sugar at room temperature1.
step 2
Then add the yoghurt and the seed oil and continue working with the electric whisk2.
step 3
It smells of grated peel and filtered orange juice3Then work the dough with a whisk.
Step 4
Mix the flour and sifted baking powder4together with a pinch of salt.
Step 5
At this point, all you have to do is mix the ingredients with the whisk without overworking the dough5. It is important that the dough has the right consistency and is not too liquid, otherwise the typical domes may not form and the muffins may remain flat.
Step 6
We used paper cases, but if you use a classic muffin tin, we recommend buttering and flouring them well so that you can easily remove them after baking. Pour the mixture into the baking cups to 2/3 of their capacity6.
Step 7
Sprinkle the surface with granulated sugar7.
Step 8
Cook in a preheated oven at 175°C for about 25 minutes. Always do the toothpick test before taking them out of the oven8 to check that they are cooked through inside.
Step 9
The soft and wonderfully fragrant orange muffins are ready: dust them with a little powdered sugar before enjoying them9.
Advice
If you want, you can use butter instead of oil in the same quantities. You can also replace the granulated sugar with flaked almonds .
To make your orange muffins even more delicious, add chocolate chips to the batter and remember to lightly flour them so they don’t sink to the bottom while baking.
To keep the muffins soft, store them under a glass cover. This will keep them looking freshly made for two to three days after they are made.
