Mille-feuilles

This dessert is one of the most classic, delicious but not very original.

Ingredients :

-800g of homemade puff pastry recipe HERE (double the proportions and remove the chocolate)
-500g of milk

-40g + 40g sugar
-5 egg yolks
-40g flan powder (imperial) or cornstarch

-granulated sugar
-1 vanilla pod

-icing sugar

-Fresh crushed pistachios

-currants

The day before, prepare the puff pastry, respecting the resting time in the refrigerator between each turn. Do 1 single round, then a double, a single and finally a double.

Wrap your dough in cling film and leave to rest overnight in the fridge.

You can of course use ready-to-use dough.

Preparation of the cream here : Boil the milk with the vanilla pod split in two, meanwhile whisk the egg yolks and sugar. When this mixture has whitened, add the flan powder. Pour the hot milk over it and thicken over low heat. Pour this cream into a salad bowl and cover with film to prevent a skin from forming. Let cool.
