Lemon Drop Cakes

Mini Lemon Drop Cakes are a must-make for any lemon lover! These sweet and tangy glazed desserts have a double dose of fresh citrus flavor baked right into the batter.

Ingredients

Lemon Cakes
1½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 cup granulated sugar
½ cup unsalted butter softened to room temperature
2 large eggs room temperature
1 large egg yolk room temperature
½ teaspoon vanilla extract
1½ teaspoons fresh lemon zest
½ cup whole milk
3 tablespoons fresh lemon juice
2 tablespoons sour cream
Lemon Glaze
1½ cups powdered sugar sifted
3 tablespoons fresh lemon juice
2 tablespoons unsalted butter melted
2 tablespoons whole milk

Instructions

Preheat oven to 350* F. Spray 2 (24 count) mini muffin tins with baker’s spray. Set aside.
In a medium bowl sift together the all-purpose flour, baking soda and salt. Set aside.
