lemon cake

Ingredients:

350g margarine
350g Flour
350g Sugar
1 pack vanilla sugar
2 tsp, heaped baking powder
6 egg(s)
3 Lemon(s), untreated
300g powdered sugar

preparation

Preheat the oven to 175 °C – 195 °C top/bottom heat.
First, grate the peel from the 3 lemons and squeeze two lemons out of them.
Then stir the eggs and sugar until foamy. Sift the flour and gradually add it along with vanilla sugar, baking powder, lemon zest and margarine. Mix everything well. Spread the dough onto a baking tray lined with baking paper. Put in the preheated oven and bake on the middle shelf for approx. 20 minutes.
Now gradually mix a glaze from the lemon juice and the powdered sugar – please use the lemon juice very sparingly, the glaze has to be nice and thick.
