Lactel Light Quiche Lorraine Without Crust

1. Preheating the oven:

Start by preheating your oven to 210°C (gas mark 7). This will ensure that the oven is at the ideal temperature when you put the quiche in the oven.
2. Preparation of the quiche mixture:

In a salad bowl, break the eggs and whisk them vigorously to obtain an airy texture.
Gradually pour in the milk while continuing to whisk.
Add the flour little by little, mixing well to avoid lumps, until you obtain a smooth and homogeneous dough.
Season with a pinch of salt and pepper to enhance the flavors.

3. Preparation of the ham:

Cut the ham into cubes or thin strips, depending on your preference. Set aside.
4. Assembling the quiche:

Butter and lightly flour a tart pan to make it easier to remove the quiche.
Arrange the pieces of ham evenly over the bottom of the mold.
Pour the egg, milk and flour mixture over the diced ham in the mold.
Sprinkle grated cheese on top for a nice gratinated topping.

5. Cooking:

Bake the quiche for about 30 minutes. The quiche should be golden brown, but the exact time may vary depending on your oven. Monitor the cooking towards the end to obtain the desired coloring.
Let cool for a few minutes before serving.

6. Service:

The quiche can be served alone or accompanied by a green salad or seasonal vegetables. It can be enjoyed hot or cold, as a starter, an aperitif or a main course.

Trick :
This recipe can be adapted to your tastes. For a creamier version, replace the milk with liquid cream. You can also add other ingredients such as bacon, smoked salmon, tuna, grated Gruyere cheese, vegetables, or even flavor the quiche with a little nutmeg or curry.
This crustless Quiche Lorraine is a lighter but equally tasty version of the classic, ideal for a simple, quick and delicious meal.
