Juicy blueberry muffins with yogurt – the best recipe

If you like small, sweet treats, these blueberry muffins with yogurt are an absolute must for you. They can be whipped up in no time, you can adapt them very well and the taste is fresh and juicy. Whether as a small snack, at a picnic, as a dessert or on the coffee table – our blueberry muffins are always a hit!

Ingredients

150g sugarโ€‹
250 g yogurt (see tips)
1 pack of vanilla sugar
100 g melted butter

2 eggs
280g flour โ€‹
ยฝ pack of baking powder (7 g)
pinch of salt
200 g blueberries (fresh or frozen)

Instructions

First you prepare all the ingredients and the necessary equipment. The dough for these blueberry muffins with yogurt should be processed quickly and therefore everything you need should already be ready. The tools you need are two bowls, a silicone dough scraper or a hand mixer and a muffin tin lined with paper cases. The oven is preheated to 175 degrees O/U heat. The first step is to add sugar, vanilla sugar, melted butter, yogurt and eggs to the first bowl and mix these ingredients together (either with a dough scraper or a hand mixer).

In the second step, weigh the dry ingredients (flour, baking powder and a pinch of salt) into the second bowl and mix them.
Now the liquid and dry ingredients come together and are briefly but vigorously mixed together. It’s important that you only stir briefly so that the muffins don’t become tough. At the end, the blueberries are carefully folded in. Here you can put some blueberries aside and press them into the dough at the end, which makes it look even nicer.
