Jaffa cake with quark

For the topping, mix the curd with sugar and lemon juice until smooth.

Soak the gelatine, dissolve it, add 1 tbsp. Add the quark mixture to the dissolved gelatine, stir and then stir this mixture into the whole quark mixture, so there are no lumps!

Beat 2 cups of cream until stiff and fold in.

Spread half of the mixture on the base and cover with Jaffa cookies.

Pour the remaining mixture over it and put it in the fridge overnight.

Whip 1 cup of cream with the cocoa and the cream stiffener and spread on the cake, garnish with the remaining Jaffa cookies.
