INDIAN CAKE

DOUGH INGREDIENTS:

– 05 eggs (whipped whites);
– 01 and 1/2 cup of sifted sugar;
– 100g of unsalted butter or margarine (or 3 heaped tablespoons);
– 1 cup of tea and 1/2 of breadcrumbs;
– 01 tablespoon of cinnamon;
– 01 tablespoon of baking powder;
– Cinnamon powder to decorate as desired. .

METHOD OF PREPARATION:

– Start by beating the egg whites and set aside.
– Place the egg yolks, sugar and margarine/butter in the mixer and beat well until you obtain a white cream.
– Once done, add the breadcrumbs, cinnamon and mix quickly.
– The dough is a little heavy and dry.
– Now, add the egg whites and stir gently until the dough becomes lighter and more homogeneous.
– Finally, add the baking powder and mix slowly.
– Pour the dough into a greased pan and bake in a preheated oven at 180°C for approximately 45 minutes, or until you insert a knife and it comes out clean.
