Preparation
Start by boiling the chopped potatoes until they are soft. Drain the water and mash the potatoes with a fork until smooth.
Add chopped onion, carrot, tuna flakes, olive oil, salt and black pepper to the mashed potatoes. Mix well so that all ingredients are uniform.
Mix the beaten eggs and grated cheese into the potato mixture until well combined. This will help bind the patties.
Form the mixture into patties as desired.
Heat a frying pan over medium heat and cook the burgers for a few minutes on each side, or until golden brown and cooked through.
Garnish the cooked patties with chopped green onions before serving.
