Preparation

Knead the dough
Mix water and eggs in a bowl, then gradually add sifted flour and salt. Mix until a sticky dough forms. Knead with your hands until the dough is smooth and no longer sticks to your hands or the bowl.
Divide the dough into two equal parts and roll each part into a thin crust. Spread softened butter or margarine evenly on the surface and fold the dough like an envelope. Repeat the folding process, making sure to butter between each fold, until you have a compact rectangle. Chill the dough in the fridge for an hour.
Preparation of the filling
Roll the dough into a large rectangle and cut into squares. Crumble the cheese and place it in the center of each square.
Align the cheese with the dough square, pressing firmly to seal the edges. Place the pastry in a tray lined with baking paper.

Beat the egg yolks and coat each pastry until golden. Bake in a preheated oven at 200 degrees for 20-25 minutes or until golden brown.
