I present to you a delicious vanilla layer cake Speculoos .

Meanwhile, whisk all the ingredients to make the cream. It should double in volume and thicken. Keep a little cream in a bag fitted with a 1M tip for decoration and refrigerate.

Melt two tablespoons of Speculoos spread for 2 to 3 seconds in the microwave.

Unroll a strip of sponge cake. Brush the surface with melted spread using a brush.

Pipe a layer of cream 1 cm thick then roll the sponge cake on itself as if to make a log. Then place the roll vertically on a cake base.

Proceed in the same way with the second sponge cake then place it around the roll from the junction and do the same with the third sponge cake. You should get something that looks like a cake.

Pour the cream over the top and sides of the cake then smooth with a spatula.

Store the cake in the freezer so that the cream freezes slightly.

Melt 2 tablespoons of Speculoos dough in the microwave then pour the dough on top of the cake.

Pipe the top of the cake then decorate with biscuits and enjoy chilled.

First, whisk the yolks with half the sugar and the vanilla sugar (photo 1). Whisk for a few minutes to whiten them (photo 2).

Next, whisk the whites. Once they have started to rise, pour in half the sugar to tighten them (photos 3 and 4). Once the whites are whipped, reduce the mixer speed to 1 and gradually pour in the blanched yolks (photos 5 and 6).

Finally, pour in the sifted flour and yeast (photo 7). And pour the dough into the sponge cake mold (photo 8).

Once the sponge cake is cooked and cooled, cut it into 3 equal parts widthwise (photos 1 and 2). Wrap each strip gently in cling film (photos 3 and 4).

Then, unroll a strip of sponge cake and brush the surface with melted spread using a brush (photo 5). Then pipe a layer of cream 1 cm thick (photo 6).

To finalize the assembly, roll the sponge cake around itself as if to make a log (photo 1). Proceed in the same way with the second sponge cake then place it around the roll from the junction and do the same with the third sponge cake (photos 2 and 3).

For decoration, pour the cream on the top and sides of the cake then smooth using a spatula (photo 4). Pour Speculoos batter on top of the cake (photo 5), pipe the cake then decorate with Speculoos.
