PREPARATION:

Prepare zucchini and potatoes: Start by slicing and grating two zucchini (zucchini). Put them in a bowl, add salt and let them stand for 10 minutes. Grate larger potatoes and remove excess water.
Mix the ingredients: After draining the excess water from the zucchini, put them in a bowl together with the grated potatoes. Add semolina, milk, chopped parsley, dill and chopped red pepper. Mix well until all ingredients are well combined.

Prepare the dough for muffins: add grated hard cheese, eggs, flour and baking powder to the mixture. Mix until a smooth mixture is formed.
Baking muffins
Preheat the oven: Preheat the oven to 180 degrees Celsius.
Fill the muffin tin: spoon the batter into the muffin tin, filling each compartment three-quarters full.
Bake: place the muffin tin in the preheated oven and bake for about 20 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
Making Greek yogurt sauce
Prepare the sauce: Mix Greek yogurt, finely chopped cucumbers, olives and garlic in a bowl. Mix well until the ingredients are evenly distributed.
Adjust the seasoning: taste the sauce and adjust the seasoning if necessary, adding salt and pepper to taste.
