How to make Carrot Cake An easy and healthy recipe!

Ingredients

For the mass:

  • 3 eggs
  • 1 1/2 tablespoons sweetner or sugar to taste
  • 1 cup of warm milk
  • 3/4 cup oil (can be coconut)
  • 3 cups whole wheat flour (or flour of your choice)
  • 1 tablespoon baking powder
  • 1 1/2 cups chopped carrot

For coverage:

  • 2 tablespoons cocoa powder (unsweetened)
  • 1 tablespoon butter
  • 1 cup of milk

Preparation

  1. Start by beating the eggs in a container and add the sweetener or sugar according to your preference.
  2. Add the carrot, oil, warm milk and baking powder to the egg mixture. Continue mixing until you obtain a uniform dough.
  3. Pour the mixture into a separate bowl and gradually add the flour. Mix gently until the dough is homogeneous.
  4. Grease a cake pan and sprinkle it with a little flour to prevent the cake from sticking.
  5. Pour the batter into the mold and make sure it is uniform.
  6. Preheat the oven to 180°C and bake the cake for approximately 30 minutes or until a toothpick comes out clean when inserted into the center.
  7. While it cools, you can prepare the topping: melt the butter in a saucepan, then add the cocoa and milk. Cook over low heat and stir until the mixture thickens.
  8. Pour the topping over the cooled cake.
  9. Let the cake sit for a while so the icing can cool and harden before serving.
