Ingredients
For the mass:
- 3 eggs
- 1 1/2 tablespoons sweetner or sugar to taste
- 1 cup of warm milk
- 3/4 cup oil (can be coconut)
- 3 cups whole wheat flour (or flour of your choice)
- 1 tablespoon baking powder
- 1 1/2 cups chopped carrot
For coverage:
- 2 tablespoons cocoa powder (unsweetened)
- 1 tablespoon butter
- 1 cup of milk
Preparation
- Start by beating the eggs in a container and add the sweetener or sugar according to your preference.
- Add the carrot, oil, warm milk and baking powder to the egg mixture. Continue mixing until you obtain a uniform dough.
- Pour the mixture into a separate bowl and gradually add the flour. Mix gently until the dough is homogeneous.
- Grease a cake pan and sprinkle it with a little flour to prevent the cake from sticking.
- Pour the batter into the mold and make sure it is uniform.
- Preheat the oven to 180°C and bake the cake for approximately 30 minutes or until a toothpick comes out clean when inserted into the center.
- While it cools, you can prepare the topping: melt the butter in a saucepan, then add the cocoa and milk. Cook over low heat and stir until the mixture thickens.
- Pour the topping over the cooled cake.
- Let the cake sit for a while so the icing can cool and harden before serving.
