Homemade Peach Yogurt Mousse Cake – Smooth and Creamy No-Bake Cake

For the top, grind the biscuits with the blender, add the melted and slightly cooled butter and mix again. We transfer the composition to the pan lined with baking paper and form an even surface with the help of a glass. We put the tray in the refrigerator.
For the foam, we start by peeling the peaches from the skin and pits, then we cut them into cubes. Puree 150 grams of peaches with a blender. In a separate bowl, cover the gelatin sheets with cold water and set them aside to hydrate.
Mix the whipped cream (cold, just taken out of the fridge) until soft peaks form. Add the Greek yogurt, powdered sugar, condensed milk, peach puree and mix until homogenized with the mixer at low speed.
We remove the sheets of gelatin from the water and transfer them to a saucepan with a thick bottom. Melt them over low heat, stirring continuously. We are very careful that it does not reach the boiling point.
Add the melted gelatin to the peach and yogurt mixture and mix until smooth, at low speed. We also incorporate the peach cubes and transfer the composition to the tray. Uniformize and refrigerate the cake for at least 4 hours.
Afterwards, we remove the ring of the tray and the baking paper and decorate the cake with whipped cream (whipped cream mixed with powdered sugar) and peach slices.
