Homemade lemon cakes – Fine, tender, delicious and aromatic, they simply melt in your mouth!

For the dough, mix the soft butter together with the sugar and salt for 2-3 minutes, until homogenized and until we get a fluffy and light-colored consistency. Add the egg, lemon juice and optional spices. We homogenize. Gradually incorporate the sifted flour together with the baking powder, mixing with a spatula. We will get a sticky, creamy and soft dough.
We cover the surface of the dough with foil and put it in the freezer for 30-40 minutes, during which it will harden and become more stable.
For the cream, mix the two ingredients until smooth. We will get a glossy, velvety and dense composition. We cover the surface of the cream with foil and refrigerate for 1 hour.
We take the dough out of the refrigerator, take a teaspoon of it and form balls with a diameter of 2-2.5 mm, with oiled hands. We transfer the balls to a tray lined with baking paper, leaving enough space between them. Place the tray in the preheated oven at 180 degrees for 6-7 minutes or until the cookies pass the toothpick test and are lightly browned at the base.
We let them cool, after which we stick 2 by 2 with the previously prepared cream. We decorate the cookies with white chocolate glaze or powdered sugar glaze.
