Herb folded bread

Ingredients

Dough:
500 g flour e.g. type 550
240g water
15g yeast or 40g Livito Madre and 5g yeast
1/ 2 tsp sugar
2 tsp salt
40g oil
Herb butter
1 clove garlic
1 shallot
1/2 bunch of chives, cut into fine rolls
3 sprigs of parsley, torn
80g butter
1 tsp salt

that’s how it works
Dough:
Put all the ingredients for the dough into the mixing bowl and knead the dough for 5 minutes. Transfer the dough and let it rise, covered, for about 1 hour.
Herb butter:
Add garlic, onion and parsley to mixing bowl. Chop for 6 seconds/speed 5 and push close to the bottom.
Add salt, butter and chives and mix for 20 seconds/speed 4.
