Hazelnut cake with chocolate pudding core

  1. First, mix the pudding. Put all the ingredients except the chocolate in a saucepan, stir well and heat. Heat while stirring constantly until the mixture thickens considerably, then stir in the chocolate (chopped) and mix well. Cover the mixture and set aside.
  2. Preheat the oven to 175 °C top and bottom heat. Brush the baking pan with a little fat and sprinkle with flour or breadcrumbs.
  3. Put the butter and sugar in a large bowl and mix well. Add the eggs one at a time while stirring. Mix the flour, hazelnuts, cinnamon, salt and baking powder. Stir the mixture into the dough together with the milk. Finally, fold in the chocolate chips.
  4. Put half of the dough into the tin and smooth it out with a spoon. Pull the dough up around the edge and spread a hollow around the middle to create a “lane” for the pudding. Spoon the pudding into the hollow. Put the remaining dough on top of the pudding and spread the dough so that the pudding is completely covered. Tap the bottom of the tin once and bake the cake in the oven for 45-50 minutes until golden brown. Test for doneness and allow to cool. Carefully turn out.
  5. Mix the powdered sugar with a little milk until you have a thick glaze. Pour the glaze over the dough and serve.
