Grillage roll with chocolate and walnuts

Ingredients

for the crust:

8 egg whites,
8 tablespoons of sugar,
8 tablespoons of ground walnuts,
2 tablespoons of flour,
half a bag of baking powder,

130 g. sugar
100 g. walnut

filling

8 egg yolks
10 spoons of sugar
1 vanilla sugar

250 g. butter or margarine
100 g. cooking chocolate
200 g. grillage

decoration

100 g. cooking chocolate
3 spoons of oil
2 spoons of grillage for sprinkling

Preparation

Prepare a larger tray, I baked in a 28×38 cm tray, put baking paper on the bottom. Heat the oven to 180 degrees.

Beat the egg whites and sugar until stiff, add the nuts and flour while stirring gently, and add the baking powder. Spread the mixture in a baking tray and bake for about 15-20 minutes, it also depends on the oven. Take it out of the tin and leave it to cool together with the paper with which the crust was baked. Do not twist the crust, leave it flat to cool.

For the grillage, caramelize the sugar, add the walnuts and mix, spread out on a silicone surface or on a plate or a small pan greased with oil.

Leave to cool, then finely beat or grind in a blender. Set aside 2 spoons for decoration, the rest will be added to one part of the filling.
