The gingerbread is a typical rice cake from Camaiore , a Tuscan municipality in the province of Lucca, traditionally served to open the Easter meal, but available all year round in the town’s bakeries and bakeries. It is a fragrant and creamy rustic bite, consisting of a wrapper of crazy pasta and a soft and tasty filling of boiled rice, chopped cooked turnips, eggs, grated Parmesan, ground pepper and ricotta cream, perfect to serve both as an appetizer or as a single dish paired with a portion of grilled vegetables.
The recipe has a very ancient origin and includes slight variations on the theme depending on the family that jealously guards the secret. For example, in some versions the cereal is cooked by absorbing it in boiling milk, in others pecorino is used instead of grated parmesan , while in still others a slice of stale bread is used, already soaked in a drop of water.
