Fluffy and Savory Muffins – Easy, Quick, Satisfying Recipe – Egg, Bacon and Green Onion Muffins

Fry 3-4 strips of bacon (make sure they are not crispy). Allow to cool slightly. Next, finely chop the bacon and green onion.
Beat the eggs together with the other ingredients for the egg mixture until smooth.
Preheat the oven to 185°C. Grease a muffin tin (6 cups) with butter. Add the fillings to each cup: cheddar cheese, bacon and green onions. Then pour the egg mixture over the fillings, leaving a little space at the top.
Bake at 185°C for about 20 minutes. While they are still hot, immediately scrape the excess off the top and fold it back into each cup. Let cool for a few minutes, then loosen the edges of each muffin before removing from the pan.
