Fasting Recipe – Savory and filling veggie pie (baked) – Better than pizza?

preparation:

Break the broccoli into smaller pieces and grate. Chop the onion and transfer it to an oiled pan. Fry until translucent.
Peel and dice the carrot. Transfer the carrot cubes to the sautéed onions. Dice 1 red pepper. Add the pepper to the pan.
Season with 1/2 spoon of cumin and 1/2 spoon of paprika, add the finely chopped garlic.
Mix well and cook over medium heat for 10 minutes, stirring frequently, until the vegetables are tender.
Preparation of the dough:
In a bowl, combine 250g chickpea flour, 1/2 teaspoon turmeric, 1/2 teaspoon salt, 1/2 teaspoon baking powder. Add 240 ml of plant-based milk and 2 tablespoons of olive oil. Mix well until smooth.
Once the vegetables are ready, toss them with the grated broccoli. Pour the batter over the vegetable mixture and mix well.
Transfer the mixture to a 20x30cm baking tray, sprinkle with 2 tablespoons of vegan parmesan or another type of cheese of your choice (optional) and bake in a preheated oven at 180°C for 30 minutes.
