Easy and delicious no-bake pineapple dessert cups that melt in your mouth! Pineapple tiramisu.

Ingredients :

200 g pineapple chunks (fresh or canned)
250 g mascarpone cheese
150 ml cream
50 g sugar
1 teaspoon vanilla extract
150 ml pineapple juice
100 ml orange juice
2 tablespoons rum (optional)
12-16 ladyfingers (depending on size)
Fresh mint leaves for garnish ( optional)

Directions :

In a bowl, whisk together the mascarpone cheese, sugar, and vanilla extract until smooth.
In another bowl, whip the cream until stiff peaks form.
Gently fold the whipped cream into the mascarpone mixture until well combined.
In a shallow bowl, combine the pineapple juice, orange juice and rum (if using).
Briefly dip the ladyfingers in the juice mixture until slightly softened but not completely soaked.
Place a layer of the dipped ladyfingers in the glasses or dessert bowls.
Spread a layer of the mascarpone cream over the ladyfingers.
