Dragon Fruit Mini Cheese Bites

Instructions:

 

For the Crust:
1️⃣ Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners.
2️⃣ In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
3️⃣ Press the mixture into the bottom of each mini muffin cup to form a crust. Bake for 5 minutes, then let cool.

For the Cheesecake Filling:
1️⃣ In a large bowl, beat the cream cheese and sugar until smooth.
2️⃣ Add the egg, vanilla extract, and sour cream, mixing until fully incorporated.
3️⃣ Spoon the cheesecake filling over the cooled crusts, filling each mini muffin cup almost to the top.

For the Dragon Fruit Topping:
1️⃣ In a small saucepan, combine the diced dragon fruit, sugar, and lemon juice. Cook over medium heat until the dragon fruit is soft and the mixture thickens, about 10 minutes.

Bake:
1️⃣ Bake the mini cheese bites in the preheated oven for 12-15 minutes, or until the cheesecake is set.
2️⃣ Remove from the oven and let cool to room temperature. Chill in the refrigerator for at least 2 hours before serving.
