Curry sauce for the currywurst

Instructions

The onion is peeled and chopped very finely so that there are no large pieces in the sauce later.
Now heat 1 tablespoon of oil in a pan or pot and sweat the onion cubes in it. After about 3 minutes, add the

honey and caramelize the onion. This will create a sweet, spicy aroma. The heat should not be too high so that the sugar in the honey does not burn.

Now add ketchup, balsamic vinegar, curry powder, chili powder and cumin and let the sauce simmer for 10-15 minutes over a low heat. If it becomes too thick and reduces too much, add a splash of water.

While the sauce is simmering, fry the sausages in a frying or grill pan (of course you can also fry them on the grill or in a contact grill).

To do this, heat the remaining tablespoon of oil and fry the sausages on all sides for about 10-12 minutes until they are golden brown and have a crispy surface.

Now season the sauce again. The sausage is typically cut into slices, sprinkled with the curry sauce and additional curry powder and served with a side dish of your choice (see tips).
