Currant Cake Currant Cake Recipe is a cake that is quick to prepare

Ingredients:

170 g sugar, (fine)
170g butter
4 egg yolks
1 packet of vanilla sugar
Lemon peel, grated
300g flour
½ pack of baking powder (cream of tartar)
some Milk
For the hood:
4 egg whites
250g sugar
200 g currants (currant)

Preparation:

Mix sugar, butter, yolks, vanilla sugar, lemon peel until foamy
Mix the flour with the baking powder and sift over it, stir in well and add a little milk if necessary so that an easily spreadable batter is created.
Spread the dough onto a tray lined with baking paper and bake in a preheated oven at around 190° until golden.
In the meantime, beat the egg whites until stiff peaks form and sprinkle in the granulated sugar while continuing to beat. Now fold the currants into this solid mass!
